Holiday Roast Turkey

Makes 10 to 12 servings

14 to 15-lb. turkey, thawed

2 cloves garlic, halved and divided

1 t. seasoning salt, divided

1 onion, quartered

1 bunch fresh parsley

2 fresh thyme sprigs

5 to 6 leaves fresh sage

2 T. olive oil

pepper to taste

Rinse turkey and pat dry. Remove giblets and neck; reserve for another use. Rub inside of turkey with one clove garlic and 1/2 teaspoon salt; stuff with remaining garlic, onion and herbs. Place turkey breast-side up on a rack in a large roaster pan. Brush oil over turkey; sprinkle with remaining salt and pepper to taste. Roast turkey at 325 degrees about 2-3/4 to 3 hours, basting occasionally with pan drippings, until a meat thermometer inserted into thickest part of thigh registers 180 degrees. If needed, tent turkey with aluminum foil to prevent browning too quickly. Let turkey stand 15 to 20 minutes before carving; discard garlic, onion and herbs.
